Marco Fongoli & Paolo Lucchetti will be in town with their beautiful Umbrian and Marchese wines, two underappreciated regions. Umbria is arguably the reason that Fiore started cooking professionally as he enjoyed one of the most memorable meals of his life on a hillside during a tour as a drummer in a former life.
The Marche tucked against the Adriatic, is lamb country. It’s most famous grape, pecorino – a word that denotes any sheep’s milk cheese, is named so because harvest takes place when the sheep are ready to come down from the hills.
Fongoli’s production is all biodynamic, coaxing all the soil characteristics out of the indigenous Sagrantino and Trebbiano Spoletino. Paolo, his wife, his father and his mother, also focus on the indigenous varietals, Lacrima di Morro d’Alba and Verdicchio, producing wines of great concentration.
